Full of tender beef chunks and low-carb vegetables, this hearty and flavorful keto-friendly beef stew is sure to please.
Ingredients:
- 2 lbs beef stew meat, cubed
- 1 cup beef broth
- 1/2 cup diced tomatoes
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups cauliflower florets
- 1 cup chopped celery
- 1 cup chopped carrots optional, for lower carb count, omit
- 2 tbsp chopped fresh parsley, for garnish
Instructions:
In a slow cooker, combine beef stew meat, beef broth, diced tomatoes, onion, garlic, thyme, rosemary, salt, and black pepper
Cover and cook on low for 6-8 hours, or high for 3-4 hours, until beef is tender
Add cauliflower florets, celery, and carrots if using to the slow cooker during the last hour of cooking
Once vegetables are tender, adjust seasoning if needed
Serve hot, garnished with fresh parsley
