Ingredients:
- 1 cup 2 sticks unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1 tablespoon finely grated lemon zest
- 1 tablespoon fresh thyme leaves, chopped
- 1/4 teaspoon salt
Instructions:
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the finely grated lemon zest and chopped fresh thyme leaves to the butter-sugar mixture
Mix well to combine
Gradually add the all-purpose flour and salt to the mixture
Mix until the dough comes together
Divide the dough in half and shape each half into a log
Wrap the logs in plastic wrap and refrigerate for at least 1 hour or until firm
Preheat the oven to 350F 175C
Line a baking sheet with parchment paper
Slice the chilled dough logs into 1/4-inch thick rounds and place them on the prepared baking sheet, spacing them slightly apart
Bake in the preheated oven for about 12-15 minutes or until the edges of the cookies are lightly golden
Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once the cookies are completely cooled, they are ready to be enjoyed!
